INGREDIENTS:

1 cup kimchi, chopped plus 2 tablespoons kimchi juice

1/2 cup all-purpose flour

1/4 cup ice-cold water

1 tbs corn starch

3 scallions, chopped

4 tablespoons vegetable oil

optional: 1/2 cup of bacon, chopped
DIRECTIONS:

Mix the kimchi, flour, water, corn starch, and scallions (and bacon if you are adding it) in a bowl

Heat 4 tablespoons of oil in a large skillet over high heat

Pour in the batter using a ladle and spread it thinly

Cook until crispy for about 3-5 minutes

Flip over and cook for another 3-5 minutes

Serve on a large plate; enjoy!
