INGREDIENTS:

½ cup chopped Vegan Spicy Napa Kimchi (you can sub with Mild Napa Kimchi or Spicy Napa Kimchi)

⅓ cup kimchi juice

1 clove garlic, minced

1 tbs sugar
-
2 ts vinegar
-
3 tbs hot pepper paste
-
1 tbs toasted sesame oil

1 tbs roasted sesame seeds

7oz somyeon/somen noodles

1/2 cucumber

Optional: 1 hard boiled egg, sliced in half
DIRECTIONS:

Mix ½ cup chopped kimchi, ⅓ cup kimchi juice, 1 clove garlic, minced, 1 tbs sugar, 2 ts vinegar, ¼ cup hot pepper paste, 1 tbs toasted sesame oil, and 1 tbs roasted sesame seeds in a large bowl.

Slice 1/2 cucumber into matchsticks.

Add noodles into a pot of boiling water. Stir the noodles to prevent them from sticking together. Cook for 3-4 min.

Rinse the noodles in cold water a few times, strain them, and set aside.

Separate noodles into two bowls. Pour the sauce on top of noodles, then garnish cucumber.
