INGREDIENTS:

2 slices sourdough bread

1/2 cup shredded sharp cheddar cheese

2 tbs butter

1/4 cup kimchi, chopped and drained
DIRECTIONS:

Chop & drain your kimchi (save the brine for soups or stews!)

Butter your bread on both sides, and place the cheese evenly on both sides. Place on a heated skillet for 5-8 min (until the cheese melts).

Place the kimchi on one slice of bread, and top with the other slice of bread. Cover and cook for 2-4 min. Flip if necessary to avoid burning.
